摘要
麦角硫因是一种天然抗氧化剂,仅由真菌、蓝藻等微生物合成,可被人体从食物中摄入并积累.麦角硫因作为一种天然活性物质,能够有效清除自由基、螯合二价金属阳离子等,可被应用于医药、保健、化妆品、食品等多个领域.但目前麦角硫因价格昂贵,制备纯化技术还不成熟.本文综述了近年来麦角硫因制备、分离纯化和分析方法等方面的进展,对其研究热点和难点进行了归纳和展望,为麦角硫因的绿色、经济、高效生产提供参考.
Abstract
Ergothioneine is a natural antioxidant,which is only synthesized by fungi,cyanobacteria and other microorganisms.It can be ingested and accumulated by the human body from food.As a natural active substance,which can effectively remove free radicals,chelating bivalent metal cations,etc,it can be used in various fields such as medicine,health food and cosmetics.However,at present,ergothioneine is expensive and its preparation and purification technology is not enough.In order to provide a reference for the green,economical and efficient production of ergothioneinethe,the progress in the preparation,separation,purification and analysis methods of ergothioneine in recent years was reviewed in this paper,and the hot spots and difficulties in the research were summarized and prospected.
