基于正交分析的紫罗兰蜜薯中花青素的提取及功能分析

紫罗兰蜜薯中富含花青素,采用有机试剂浸提法提取紫罗兰蜜薯中的花青素。花青素实验室提取工艺的优化使用了单因素和L9(34)正交试验,并通过测定花青素对DPPH自由基和ABTS自由基的清除能力验证了花青素的抗氧化功能。结果表明,在本实验条件下,紫罗兰蜜薯中花青素最佳提取工艺为:乙醇质量浓度50%,原料:提取试剂比1∶30(g∶mL),浸提时间45 min,在此条件下花青素提取率为 6。42%,且花青素对DPPH自由基和ABTS自由基具有较强的清除能力。
Extraction and Functional Analysis of Anthocyanins from Violet Sweet Potato Based on Orthogonal Design
Anthocyanins are secondary metabolites that widely existed in fruits and vegetables such as violet sweet potato,organic reagent extraction method was used to extract anthocyanins from violet sweet potato in this study.the extraction process was optimized by single factor experiments and L9(34)orthogonal test,and the antioxidant activity of the extracted anthocyanins was evaluated by measuring the scavenging ability of DPPH free radical and ABTS free radical.As showed in the results,the best extraction process of anthocyanin from sweet potato was:the concentration of ethanol was 50%,raw material to reagent ratio of 1∶30(g∶mL),extract for 45 min.The extraction rate of anthocyanin under these conditions was 6.42%,and the obtained anthocyanin had strong scavenging ability of DPPH hydroxyl radical and ABTS free radical.
