Extraction and Functional Analysis of Anthocyanins from Violet Sweet Potato Based on Orthogonal Design
Anthocyanins are secondary metabolites that widely existed in fruits and vegetables such as violet sweet potato,organic reagent extraction method was used to extract anthocyanins from violet sweet potato in this study.the extraction process was optimized by single factor experiments and L9(34)orthogonal test,and the antioxidant activity of the extracted anthocyanins was evaluated by measuring the scavenging ability of DPPH free radical and ABTS free radical.As showed in the results,the best extraction process of anthocyanin from sweet potato was:the concentration of ethanol was 50%,raw material to reagent ratio of 1∶30(g∶mL),extract for 45 min.The extraction rate of anthocyanin under these conditions was 6.42%,and the obtained anthocyanin had strong scavenging ability of DPPH hydroxyl radical and ABTS free radical.
