为研究不同地区的玛伽主要营养成分,按照国家相关标准对玛伽进行了多种营养成分分析.结果表明,玛伽含有人体所需的主要营养成分蛋白质、氨基酸和多种人体必需的微量元素和脂肪酸等,不同地区存在差异;四川玛伽蛋白质34.7%,氨基酸总量为25.18%,精氨酸含量为5.81%,均高于青海和新疆玛伽的含量;青海玛伽亚油酸含量最高为45.34%,四川玛伽亚麻酸含量最高为25.67%,四川玛伽油酸含量最高为11.00%.玛伽营养丰富,且氨基酸组分中精氨酸含量较高,不饱和脂肪酸比例较高,其可以作为营养保健品使用.
Analysis of Main Nutritional Components of Maca from Different Regions
Various detecting methods were applied to study the main nutritional components of Maca from different regions of China.The results showed that Maca was rich in protein and amino acids which are main necessary nutrients for people.Besides,it also had many other necessary nutrients such as essential trace element and fatty acids,etc.The main nutritional components of Maca from different regions had different.The contents of protein,total amino acids,and arginine in Maca from Sichuan were 34.7%,25.18%,5.81%,respectively,which were higher than Maca from Qinghai and Xinjiang.The highest content of linoleic acid was 45.34% in Maca from Qinghai.The highest content of linolenic acid was 25.67% in Maca from Sichuan.The highest content of oleic acid was 11.00% in Maca from Sichuan.Thus Maca contains abundant nutrition,and can be used as nutritious health products for its rich arginine content among amino acids and rich unsaturated fatty acids.
