Untargeted metabolomics analysis of differences in pectoral muscle metabolism of different pigeon breeds
In order to understand the metabolic differences in the pectoral muscle tissue of different meat pigeons and their effects on meat quality and flavor,16 Silver King pigeons and 16 Shenwang No.1 meat pigeons aged 28 days were selected,non-targeted metabolites of pectoral muscle metabolites were detected by liquid chromatoc-mass spectrometry(LC-MS),and metabolomics analysis technique was used for differential analysis of metabolic patterns,screening of differential metabolites,and enrichment analysis of differential metabolite metabolic pathways.The results showed that under positive/negative ion modes,80 and 47 metabolites were detected in pectoral muscle of Silver King pigeons and Shenwang No.1 pigeons,and 13 differential metabolites were identified.Compared to Silver King pigeons,8 differential metabolites were up-regulate significantly(P<0.05)and 5 were down-regulate significantly(P<0.05)in Shenwang No.1 pigeons.KEGG analysis showed that these 13 differential metabolites were enriched on 23 metabolic pathways,mainly including amino acid metabolism,unsaturated fat metabolism,nucleotide metabolism,phosphate metabolism and other metabolic pathways.Scientific basis for further elucidating the regulatory mechanism of chest muscle flavor substances were provided in different pigeon varieties.
