Research Progress on Processing Technology of Fuzhuan Brick Tea and Dominant Microbial Community in Fermentation Process
Fuzhuan tea derives its unique flavor and manifold health benefits from the'golden flower'fungus generated during its fermentation process.However,due to the complexity of traditional Fuzhuan tea processing and its difficulty in control,some harmful bacteria tend to grow and proliferate easily.Meanwhile,the incomplete understanding of its quality and health benefits raises some doubts.Therefore,there is a need to delve into the microbial distribution,metabolic byproducts,and health effects during the fermentation process of Fuzhuan tea.The current research status of Fuzhuan tea processing and microbial distribution during fermentation were reviewed,the methods for isolating and identifying dominant bacteria were elucidated,and the current application status and health benefits of Eurotium were discussed.This provides a theoretical foundation for exploring functional fungi in Fuzhuan tea and prospects for future research and applications of E.cristatum,aiming to serve as a theoretical guide for the promotion and extensive development of Fuzhuan tea.
