Safety problem is one of the main factors restricting the development of prefabricated food.The safety control of prefabricated food production process is the first line of defense to ensure the safety of prefabricated food.This paper mainly explores the safety risks and control measures of each link in the production process of prefabricated food,and prevents the safety problems in the production process,in order to provide theoretical guidance for the safety control and research of prefabricated food.
