柳州预包装螺蛳粉理化检测分析与质量控制

本文采用指示剂滴定法、火焰原子吸收光谱法和盐酸萘乙二胺法检测预包装螺蛳粉中过氧化值、铅和亚硝酸盐的含量.通过走访不同品牌的螺蛳粉预包装企业,现随机采集预包装螺蛳粉共 15 份,在本实验室及第三方检测公司对样品进行检测.结果显示过氧化值最低值为0.011 g/100 g,最高值为0.097 g/100 g,平均值为 0.048 g/100 g.铅含量最低值为 0.014 mg·kg-1,最高值为 0.123 mg·kg-1,平均值为 0.047 mg·kg-1.亚硝酸钠含量最低值为 0.254 mg·kg-1,最高值为 3.113 mg·kg-1,平均值为 1.452 mg·kg-1.说明预包装螺蛳粉的理化分析结果符合螺蛳粉地方产品标准.本文通过对预包装螺蛳粉理化指标进行分析,探讨预包装螺蛳粉质量控制,为建立健全预包装螺蛳粉质量安全体系及规范企业安全生产提供可参考的依据.
Physical and Chemical Analysis and Quality Control of Liuzhou Pre-Packaged River Snails Rice Noodles
In this paper,indicator titration,flame atomic absorption spectrometry and naphthalene ethylenediamine hydrochloride were used to determine the peroxide value,lead and nitrite content in prepackaged Luosifen.Through visiting Luosifen prepackaging enterprises of different brands,15 prepackaged Luosifen samples are randomly collected and tested in our laboratory and third-party testing companies.The results showed that the lowest value of peroxide value was 0.011 g/100 g,the highest value was 0.097 g/100 g,and the average value was 0.048 g/100 g.The minimum lead content is 0.014 mg·kg-1,the maximum value is 0.123 mg·kg-1,and the average value is 0.047 mg·kg-1.The lowest value of sodium nitrite content is 0.254 mg·kg-1,the highest value is 3.113 mg·kg-1,and the average value is 1.452 mg·kg-1.It indicates that the physical and chemical analysis results of prepackaged Luosifen meet the local product standard of Luosifen.Through the analysis of physical and chemical indexes of prepackaged Luosifen,this paper discusses the quality control of prepackaged Luosifen,and provides a reference basis for establishing and improving the quality safety system of prepackaged Luosifen and standardizing the safety production of enterprises.
