昆明地区米线质量检测与风险防范

以昆明地区米线为研究对象,通过对检测数据进行分析,从抽样场所、包装分类、指标分类等角度描述了米线不合格产品情况.结果表明,214 批次样本中,不合格产品24 批次,不合格率为11.2%,不合格项为山梨酸(1 批次)、苯甲酸(1 批次)、脱氢乙酸(4 批次)、二氧化硫残留量(13 批次份)、菌落总数(8 批次)和大肠菌群(3 批次).小食杂店不合格率最高,为50.0%,散装不合格率高于预包装.
Quality Inspection and Risk Prevention of Rice Noodles in Kunming Area
Taking Kunming rice noodles as the research object,through analyzing the test data,the unqualified rice noodles were described from the sampling site,packaging classification and index classification.The results showed that among the 214 samples,24 products were unqualified,the unqualified rate was 11.2%,and the unqualified items were sorbic acid(1 part),benzoic acid(1 part),dehydroacetic acid(4 parts),sulfur dioxide residue(13 parts),total number of colonies(8 parts)and coliform bacteria(3 parts).The unqualified rate of small grocery stores was the highest,50.0%,and the unqualified rate of bulk stores was higher than that of pre-packaging.
