摘要
野菜营养价值丰富,含有多种有益于人体健康的活性成分.许多野菜兼具食用价值和药用价值,因此研究野菜的营养及功能性成分具有重要意义.本文对野菜的营养成分、功能性成分与功效以及野菜的食用方法进行了综述,以期为今后野菜营养相关研究以及野菜产品开发提供参考.
Abstract
Wild vegetables are rich in nutritional value and contain a variety of active ingredients that are beneficial to human health.Many wild vegetables have both food value and high medicinal value,so it is important to study the nutritional and functional components of wild vegetables.In this paper,the nutritional composition,functional composition and efficacy of wild vegetables as well as the edible methods of wild vegetables are reviewed,with a view to providing references for future research on the nutritional aspects of wild vegetables as well as the development of wild vegetable products.
