Analysis of Food Workshop Processing Operation Area Division
Scientific and reasonable division of working areas in food workshops is a prerequisite for achieving a good food production environment.The existing national standard GB 14881-2013 only makes a principled provision for the division of the working area of the food workshop,and at present,in addition to the promulgation of the new review rules for six products such as beverages,other products adopt the 2006 edition of the review rules,and do not make specific provisions for the division of the working area.This paper introduced China's food workshop environmental hygiene grade classification system,namely workshop air cleanliness grade classification system,collected and sorted out national latest industry hygiene standards or review rules for different operating areas of air cleanliness requirements,statistics and summary of the latest review rules of countries such as beverages on the specific provisions of the division of related products in the operation area.The general principle of dividing food processing area is put forward for reference.
