云南地区野生食用菌重金属残留量的统计与分析

为了评估云南地区常见野生食用菌重金属污染元素铅、镉、砷和汞的含量水平,本文依据《食品安全国家标准 食品中多元素的测定》(GB 5009.268-2016)和《食品安全国家标准 食品中污染物限量》(GB 2762-2022)对云南省昆明、大理、玉溪、楚雄、丽江及普洱6 个地区常见野生食用菌进行重金属污染元素残留量的评估.结果表明,收集的 585 批次样品中有 171 批野生菌样本重金属含量超过国家标准规定.其中,鸡枞菌、羊肚菌镉元素超标较突出,大红菌、松茸总砷元素超标最为突出,牛肝菌、奶浆菌汞元素超标突出,香菇中无重金属元素超标.
Statistics and Analysis of Heavy Metal Residues in Wild Edible Fungi in Yunnan Province
In order to assess the contents of Pb,CD,As and Hg in common wild edible fungi in Yunnan province,the residual heavy metal pollution elements of common wild edible fungi in Kunming,Dali,Yuxi,Chuxiong,Lijiang and Pu'er in Yunnan province were assessed based on GB 5009.268-2016 and GB 2762-2022.The results showed that 171 of the 585 samples collected had heavy metal content exceeding the national standard.Among them,the cadmium element exceeded the standard of Collybia albuminosa and Morchella esculenta,the total arsenic element exceeded the standard of Russula griseocarnosa and Tricholoma matsutake,the mercury element exceeded the standard of Boletus and Lactarius volemus,and no heavy metal element exceeded the standard of shiitake mushroom.
