Research Progress and Hot Spot Analysis of Fermentation Field in Recent Five Years Based on Cite Space
In recent years,China's biological industry has developed rapidly,and fermentation has many benefits for body and gastrointestinal health.Research on microbial fermentation has gradually increased.In order to explore the research status and development prospect of fermentation field in the past five years,the literatures published in China knowledge Network and Web of Science database from 2019 to 2023 were searched and screened,and the atlas analysis of the number of articles,research team and research hotspots were carried out by using Cite Space software.The results showed that the number of publications in the field of domestic fermentation in the past five years was relatively small,and the annual number of publications increased steadily.There are more foreign publications,with an annual number of more than 100 papers,and the number of papers will reach 200 in 2023;the research groups at home and abroad are mainly Chinese medicine universities and research institutions;domestic and foreign research focuses on antioxidant and intestinal flora.Domestic research focuses on fermentation technology,while foreign research has a wide range of research,focusing on probiotics.The cooperation between domestic and foreign scholars is relatively close,but the research institutions have not yet formed a close cooperative relationship.Universities and research institutions should break through regional restrictions and promote the integration of fermentation research.Intestinal flora is a research hotspot in fermentation in the past five years,and it is also the object of in-depth research in the future.
