摘要
花色苷是花青素的显色成分,存在于很多植物体内,具有抗氧化活性、抗癌、抗肥胖等作用.本研究概述了花色苷的分布、提取方式、鉴别及定量分析、生物学特性研究进展,并展望了花色苷在食品中的应用.
Abstract
Anthocyanins are the chromogenic components of anthocyanins,which exist in many plants and have antioxidant activity,anti-cancer,anti-obesity and other effects.In this study,the distribution,extraction,identification,quantitative analysis and biological characteristics of anthocyanins were summarized,and the application of anthocyanins in food was prospected.
