Production and Inf luence of Mycotoxins and Their Metabolites in Grain
Mycotoxins are secondary metabolites produced by filamentous fungi,and Aspergillus and Fusarium are the main plant pathogens that produce mycotoxins in food crops.More than 400 kinds of mycotoxins have been recorded in China,among which aflatoxin,trichothecenes and zearalenone are the most common mycotoxins affecting human and animal health.Because of the toxic effect of mycotoxins on organisms and the importance of international trade,the detection of mycotoxins in grain is of great significance.In this paper,the main mycotoxins in grain and their sources and hazards were reviewed to provide reference and theoretical basis for food safety storage and mycotoxin testing.
