摘要

食品添加剂是食品工业中应用最广的一种助剂,近几年来一直备受关注.将其应用于食品生产,不仅能延长食品的保质期,还能改善食品的口感、色泽、营养价值及功能.但是随着人们食品安全与健康意识的日益提高,其负面效应也逐渐显露出来.本文主要探究在食品添加剂研发中存在的挑战,提出食品添加剂在食品研发中的应用要点,意在为我国食品安全形势的稳定提供助力.

Abstract

Food additives are the most widely used additives in the food industry,which have been in the spotlight in recent years.Applying them to food production can not only extend the shelf life of food,but also improve its taste,color,nutritional value,and function.However,with the increasing awareness of food safety and health among people,its negative effects are gradually emerging.This article mainly explores the challenges in the research and development of food additives,proposes the application points of food additives in food research and development,and aims to provide assistance for the stability of China's food safety situation.
