硒是谷胱甘肽过氧化物酶、硫氧还蛋白等30多种硒蛋白和含硒酶的重要组成部分,在抗氧化、抗癌活性和提高人体免疫力方面发挥重要作用.硒不能由人体细胞产生,必须通过膳食摄入,食用富含硒的农产品被认为是补充硒的最安全、最有效的方式.因此,本文对富硒食品的吸收转化机制进行了详细阐述,并对富硒食用菌与富硒植物的生物活性进行对比分析,旨在为富硒食品的综合利用提供理论指导.
Bioactivity Analysis of Selenium-Rich Edible Fungi and Selenium-Rich Plants
Selenium is an important component of more than 30 selenoproteins and selenoenzymes,such as glutathione peroxidase,thioredoxin,and plays an important role in antioxidant and anticancer activities and improving human immunity.Selenium cannot be produced by human cells and must be ingested through diet.Eating selenium-rich agricultural products is considered to be the safest and most effective way to supplement selenium.Therefore,the absorption and transformation mechanism of selenium-rich foods was elaborated in this paper,and biological activities of selenium-rich edible fungi and selenium-rich plants were compared and analyzed,aiming to provide theoretical guidance for the comprehensive utilization of selenium-rich foods.
