By optimizing the experimental procedure,a method for the determination of lead content in ginger pickles by microwave digestion-graphite furnace atomic absorption spectrometry was established. The results showed that the linear correlation coefficient of this method was 0.999 9,the detection limit was 0.007 mg·kg-1,the recovery rate was 92.7%~100.6%,and the relative standard deviation range was 0.1%~1.3%.The optimized method is convenient and fast, with good accuracy and high precision, and is suitable for the determination of lead content in ginger pickles.
