摘要
PCR技术因具有高灵敏度、高特异性和快速性的特点,在食品微生物检测领域广泛使用.本文阐述食品中常见的致病微生物、PCR技术的基本原理、食品中常见致病微生物的PCR检测方法,探讨PCR技术在食品微生物检测中的应用,并介绍PCR技术在食品微生物检测中的发展趋势.
Abstract
PCR technology is widely used in the field of food microbiological detection because of its high sensitivity,high specificity and rapidity.This paper describes the common pathogenic microorganisms in food,the basic principle of PCR technology,the PCR detection method of common pathogenic microorganisms in food,discusses the application of PCR technology in food microbial detection,and introduces the development trend of PCR technology in food microbial detection.
