摘要
重金属含量超标是食品污染的主要类型之一,重金属污染食品严重威胁消费者的安全健康,为保障食品安全,其检测分析方法是当前的研究热点之一.本文分析了食品中重金属的来源和危害,从酶法、光谱法、质谱法 3 个方面介绍了食品中重金属的常规检测技术,从试纸法、适配体法 2 个方面介绍了新型检测技术.希望为实际检测工作开展提供参考,帮助检测人员合理选择检测方法,提高检测效率和质量,更好地保障食品安全.
Abstract
Heavy metal content is one of the main types of food contamination,and heavy metal contaminated food seriously threatens the safety and health of consumers.This paper analyzes the source and harm of heavy metals in food,introduces the conventional detection technology of heavy metals in food from three aspects of enzyme method,spectroscopy method and mass spectrometry,and introduces the new detection technology from two aspects of test paper method and aptamer method.It is hoped that this paper can provide reference for the actual detection work,help the detection personnel to choose the test method reasonably,improve the detection efficiency and quality,and better guarantee the food safety.
