Determination of Content of Ethyl Maltol in Spicy Strips by Gas Chromatography-Mass Spectrometry
A gas chromatography-mass spectrometry analysis method is established to determine the content of ethyl maltol in spicy strips.By optimizing the pre-processing and examining the linear relationship,spiked recovery rate,detection limit,and quantification limit of the method,the external standard method is used for quantification.The results indicate that the linearity is good within the range of 0 μg·mL-1 to 1.0 μg·mL-1(r>0.999),with a detection limit of 0.3 mg·kg-1 and a quantification limit of 1.0 mg·kg-1 for ethyl maltol.The recovery rate of the added standard is within the range of 90.0%to 98.6%,and the relative standard deviation is less than 5%.This method has the advantages of being fast,sensitive,and accurate,and can meet the determination of ethyl maltol content in spicy strips.
