Application of Molecular Biology Techniques in Food Microbial Detection
In this paper,the application of molecular biology techniques such as polymerase chain reaction,real-time polymerase chain reaction,amplified fragment length polymorphism analysis,aptamers and CRISPR-Cas systems in the detection of food microorganisms is discussed in detail,and it is concluded that these technologies have the advantages of high detection sensitivity,good specificity,short detection time,and can expand the detection range,which can provide efficient and flexible tools for food safety detection.
