Safety Risk Assessment and Analysis of Reusable Tableware in Fuzhou City in 2023
Objective:To investigate the safety and health status of reusable food and beverage utensils in the catering industry in Fuzhou,aiming to provide a scientific basis for strengthening hygienic quality supervision and management.Method:According to GB 14934-2016,the random sampling of sterilized tableware in Fuzhou city was carried out,and the indicators were tested.Result:In 2023,the average qualified rate of reusable tableware in Fuzhou was 77.37%.Among them,the sanitary safety of small catering(including micro catering snack bar)was poor,the unqualified rate of anionic synthetic detergent was 11.30%,and the unqualified rate of coliform bacteria was 13.04%.Conclusion:Most of the reusable tableware in catering industry in Fuzhou meet the quality requirements,but there are still a few restaurants with potential safety hazards.It is necessary to strengthen the supervision of reusable tableware,implement the main responsibility of catering units,and enhance consumers'legal awareness,so as to ensure people's food safety.
