摘要

预制菜具有品种多、生鲜原料多等特点,生产工厂管理水平参差不齐,建立包括供应商端、生产端、物流及销售端的追溯体系非常重要.本文探讨预制菜生产工厂追溯体系的建立方法,提出工厂应建立相应的培训体系,每年进行 1~2 次的模拟演练,从而验证追溯体系的有效性;从平台建设、标准建立、从业者的主体意识提升等方面,提出加强政府监管的建议.

Abstract

Prefabricated dishes have the characteristics of a wide variety and a variety of fresh ingredients,and the management level of production factories varies.It is very important to establish a traceability system that includes the supplier end,production end,logistics,and sales end.This paper explores the method of establishing a traceability system for prefabricated vegetable production factories,and proposes that factories should establish corresponding training systems.They should conduct 1~2 simulation exercises annually to verify the effectiveness of the traceability system;from the aspects of platform construction,standard establishment,practitioners'awareness of the main body and so on,this paper puts forward suggestions to strengthen government supervision.
