运用自动凯氏定氮仪法对腐竹中蛋白质含量进行检测,对检测过程的不确定度进行分析评定,以进一步完善检测过程的质量控制.结果表明,腐竹中蛋白质含量为 43.2 g/100 g时,扩展不确定度为1.6 g/100 g(在 95%置信区间下,k=2).由仪器引入的不确定度和检测过程重复性引入的不确定度对检测不确定度的影响较大.
Evaluation of Uncertainty in the Determination of Protein Content in Yuba by Automatic Kjeldahl Nitrogen Determination Instrument
The automatic Kjeldahl nitrogen analyzer method was used to detect the protein content in yuba,and the uncertainty of the detection process was analyzed and evaluated to further improve the quality control of the detection process.The results show that when the protein content in yuba is 43.2 g/100 g,the expanded uncertainty is 1.6 g/100 g(at 95%confidence interval,k=2).The uncertainty introduced by the instrument and the uncertainty introduced by the repeatability of the detection process have a significant impact on the detection uncertainty.
