Current Status and Development Trends of Detection Technology for Harmful Substances in Food
Food safety issues have attracted increasing public attention,and detection technology of harmful substances in food is an important means to ensure food safety.This article reviews the types and sources of common harmful substances in food,discusses in detail detection methods such as gas chromatography,liquid chromatography,mass spectrometry,enzyme-linked immunosorbent assay and biochip technology and their advantages and disadvantages,and summarizes the detection technology the development trends of diversification,intelligence and automation,portability and greening.The comprehensive application of multiple testing technologies is the key to improving food safety testing levels.
