目的:对熟肉制品、速冻调理肉、速冻水产制品、即食果蔬制品、冷冻饮品和乳制品 6 类食品开展单核细胞增生李斯特氏菌检测,总结试验注意事项,评估病原菌污染风险,为食品质量监控提供依据.方法:依据国家标准对样品进行增菌、分离、初筛、鉴定,计算检出率.结果:速冻调理肉、速冻水产制品、冷冻饮品 3 类食品均检出单核细胞增生李斯特氏菌,其中冷冻饮品检出率最高.结论:冷冻食品有单核细胞增生李斯特氏菌污染风险;选择合适的检测方法监控病原菌,可降低单核细胞增生李斯特氏菌食品污染发生概率,保障食品安全.
Application Analysis of Detection Methods for Listeria monocytogenes in Food
Objective:To detect Listeria monocytogenes in cooked meat products,quick-frozen prepared meat,quick-frozen aquatic products,ready-to-eat fruit and vegetable products,frozen drinks and dairy products.Summarize the precautions of the test,assess the risk of pathogen contamination,to provide the basis for food quality control.Method:According to the national standard,the samples were increased,separated,screened,identified and calculate the detection rate.Result:Listeria monocytogenes were detected in frozen prepared meat,frozen aquatic products and frozen drinks.The detection rate of frozen drinks was the highest.Conclusion:Frozen food has the risk of Listeria monocytogenes contamination.Select the appropriate test method to monitor the pathogen,reduce the probability of Listeria monocytogenes contaminating food,ensure food safety.
