摘要

蚕豆富含蛋白质、淀粉和脂肪等多种营养成分,营养价值丰富,是我国重要的植物资源.本文结合国内外相关领域的研究文献,阐述蚕豆蛋白的分离提取方法,旨在为提高蚕豆蛋白提取率及蚕豆深加工水平提供一定的理论支持.

Abstract

Broad bean is rich in protein,starch,fat and other nutrients,and is an important plant resource in China.In this paper,the separation and extraction methods of broad bean protein were discussed based on the relevant literatures at home and abroad,aiming at providing theoretical support for improving the extraction rate of broad bean protein and deep processing level of broad bean.
