Bacteriophages are viruses that specialize in infecting and killing bacteria,and have attracted the attention of researchers in the field of biological control in the food industry due to their strong specificity,environmental friendliness,and natural presence.Bacteriophages can effectively control pathogenic bacteria such as Salmonella,Escherichia coli,and Listeria in food processing and storage by recognizing and infecting bacteria,utilizing host cells to replicate and cause bacterial lysis and death.In the food industry,bacteriophages can be used to process meat products,dairy products,and aquatic products,extend the shelf life of fruits,vegetables,and grains,and play a protective role in food packaging materials.This article analyzes the mechanism of action of bacteriophages,focuses on their role in food safety,and looks forward to their future development directions.
