电化学传感器在食品添加剂检测中的应用

食品添加剂在改善食品品质方面发挥着重要作用,但非法添加或超量使用会危害消费者健康.电化学传感器凭借灵敏度高、选择性好、快速、成本低等优点,在食品添加剂检测中展现出广阔的应用前景.本文分析了电化学传感器在抗氧化剂、甜味剂、色素等食品添加剂检测方面的应用,提出采用纳米材料修饰电极、分子印迹技术构建传感器是其主要发展方向.新型电化学传感器的研制有望进一步提高食品添加剂检测的灵敏度和选择性,为保障食品安全提供重要的技术支撑.
Application of Electrochemical Sensor in the Detection of Food Additives
Food additives play an important role in improving food quality,but the illegal addition or excessive use will harm the health of consumers.With the advantages of high sensitivity,good selectivity,high speed and low cost,the electrochemical sensor shows a broad application prospect in the field of food additives detection.In this paper,the application of electrochemical sensors in the detection of antioxidants,sweeteners,pigments and other food additives is analyzed,and the main development direction of the sensor is to use nanomaterial modified electrodes and molecular imprinting technology to construct the sensor.The development of a new electrochemical sensor is expected to further improve the sensitivity and selectivity of food additive detection,and provide important technical support for food safety.
