Application of Chromatographic Technology in the Detection of Baijiu Flavor
The flavor of Baijiu is an important factor reflecting the overall quality of Baijiu,which has a direct impact on consumers'purchase.However,the flavor of Baijiu with different flavor types on the market is quite different.In order to improve the flavor quality of Baijiu,it is necessary to analyze the important flavor substances in Baijiu.Chromatographic technology has shown great advantages in the detection and analysis of flavor components in Baijiu.Therefore,this paper reviewed the application of chromatography in the detection of Baijiu flavor,in order to provide a reference for improving the overall flavor quality of Baijiu.
