摘要

重金属是食品中常见的一类污染物,可通过食物链进入人体,对人体健康产生潜在危害.本文探讨了重金属污染的来源、毒性机理及其对人体健康的影响,并系统分析了暴露评估、剂量-反应评估和风险表征等重金属风险评估方法,同时提出了制定科学的食品安全标准、加强监管检测以及完善食品追溯体系等有效监控策略.通过全面的风险评估和有效的监控措施,为食品安全管理提供理论支撑.

Abstract

Heavy metals are a common type of pollutant in food that can enter the human body through the food chain and pose potential hazards to human health.This article explores the sources,toxicity mechanisms,and impacts of heavy metal pollution on human health.It systematically analyzes heavy metal risk assessment methods such as exposure assessment,dose-response assessment,and risk characterization,and proposes effective monitoring strategies such as developing scientific food safety standards,strengthening regulatory testing,and improving food traceability systems.Through comprehensive risk assessment and effective monitoring measures,it provides theoretical support for food safety management.
