Analysis of Preservative Testing Results in Mooncakes in Fuan City
Objective:To understand the content of benzoic acid,sorbic acid,and dehydroacetic acid in mooncakes sold in Fuan city.Method:A total of 65 mooncake products were collected from 48 pastry shops(individual businesses)and 2 companies in Fuan city.The content of benzoic acid,sorbic acid,and dehydroacetic acid was tested according to national standard methods,and the test results were judged and analyzed based on GB 2760-2014.Result:Benzoic acid,sorbic acid,and dehydroacetic acid in mooncakes did not exceed the standard,and no benzoic acid was detected.The detection rate of sorbic acid was 4.6%,and the detection rate of dehydroacetic acid was 23.1%;the detection rate of preservatives varies greatly among different varieties of mooncakes,with most fruit flavored mooncakes detecting preservatives;compared to individual businesses,enterprises use preservatives more commonly and in larger quantities.Conclusion:There is no excessive use of preservatives in mooncakes sold in Fuan city,and the use of these three preservatives in mooncakes is mainly dehydroacetic acid.
