武夷红茶标准水浸出物指标调整必要性研究

水浸出物是评价武夷红茶质量的重要指标.武夷红茶的执行标准《地理标志产品 武夷红茶》(DB35/T 1228-2015)中要求武夷红茶水浸出物必须≥33%,但在实际检测过程中发现部分武夷红茶尤其是不施肥不打药的生态红茶存在水浸出物不合格的情况,反映出标准中水浸出物指标设置过于严格.本研究通过比较不同红茶产品标准中水浸出物指标,检测不同等级奇红、正山小种及小种红茶水浸出物含量,以及分析武夷红茶水浸出物不合格分布区间以及原因,建议将武夷红茶的相关指标调整为水浸出物≥30%.
Research on the Necessity of Adjusting the Standard Water Extract Indicators of Bohea Tea
The water extract content is an important indicator for evaluating the quality of Bohea tea.The implementation standard of Bohea tea DB35/T 1228-2015 requires that the water extract content of Bohea tea must be≥33%.However,in the actual testing process,it was found that some Bohea teas,especially ecological black teas without fertilizer or pesticide,had unqualified water extract content,reflecting that the water extract index in the standard was too strict.This study compared the water extract index in different black tea product standards,tested the water extract content of different grades of Speciad Red,Lapsang Souchong and Souchong black tea,and analyzed the distribution range and reasons of unqualified water extract content of Bohea tea.It is recommended that the water extract index of Bohea tea be adjusted to≥30%.
