摘要

本文介绍了分子生物学中Southern印迹杂交、免疫印迹法、聚合酶链式反应、基因芯片等技术在食品安全领域的多方面应用,包括品种鉴定、过敏原检测、安全检测、食品溯源等,同时对该领域的未来发展进行了展望,旨在为食品安全领域的创新发展提供参考.

Abstract

This paper introduces the application of molecular biology such as Southern blot hybridization,immunoblotting,polymerase chain reaction,and gene chips and other technologies in the field of food safety,including variety identification,allergen detection,safety testing,and food traceability,and also looks forward to the future developments in this area,which aims to provide a reference for innovative development in the field of food safety.
