近年来,在食品加工过程中违法使用添加剂的案例频发,对公众健康构成了潜在威胁.高效液相色谱-质谱联用技术(High Performance Liquid Chromatography-Mass Spectrometry,HPLC-MS)综合了HPLC的高选择性与MS的高灵敏、高效率的优点,是当前食品检测领域的重要工具之一.该技术在打击违法使用添加剂方面发挥着重要作用,可以更好地服务于食品监管.基于此,本文综述了近年来HPLC-MS在检测食品添加剂中的应用,以期为促进食品行业健康发展提供有益参考.
Research and Application of High Performance Liquid Chromatography-Mass Spectrometry for the Detection of Additives in Food
In recent years,there have been frequent cases of illegal use of additives in food processing,posing a potential threat to public health.High performance liquid chromatography-mass spectrometry(HPLC-MS)combines the high selectivity of HPLC with the high sensitivity and high efficiency of MS.It is one of the indispensable tools in the field of food detection.The technology plays an important role in combating illegal additives and can better serve food regulation.Based on this,this paper reviews the application of HPLC-MS in detecting additives in food industry in recent years,in order to provide useful reference for promoting the healthy development of food industry.
