摘要
竹笋因营养丰富、风味独特、功能多样而被作为深加工产品研发的优质原料.本文重点从竹笋饼干和糕点研发、竹笋调味品开发、竹笋饮品研发工艺及竹笋高附加值产品研发等方面综述竹笋深加工产品开发进展,并指出竹笋高值化产品开发、竹笋预制菜是未来竹笋深加工产品的研究重点之一.
Abstract
Bamboo shoots are used as high quality raw materials for deep processing products because of their rich nutrition,unique flavor and diverse functions.This paper reviews the development of bamboo shoot deep processing products from the aspects of bamboo shoot biscuit and pastry development,bamboo shoot condiment development,bamboo shoot drink development technology and bamboo shoot high value-added products development,and points out that bamboo shoot high value product development,bamboo shoot prefabricated vegetables are one of the future bamboo shoot deep processing products.
