Chinese prepared dishes refer to the Chinese food that can be eaten by consumers simply by heating or seasoning after preliminary processing.With the increase of market demand,the nutrition retention and food safety of prepared dishes have been paid more and more attention.This paper systematically analyzed the core nutrients of Chinese prepared dishes and their changes during processing,discussed the common food safety problems in Chinese prepared dishes,and proposed countermeasures to improve the nutritional value and food safety of Chinese prepared dishes.
