Situation of Endogenous Formaldehyde Research and Monitor Recommendation on Baijiu
Baijiu is a kind of popular beverage for chinese people.plenty of research indicates that many foods have different concentrations endogenous formaldehyde in themselves,includes Baijiu too.There is no formaldehyde minimum limit in Baijiu standards now,it is probably related to its endogenous characteristic.However,the recearch about formaldehyde control technology,risk assessment and transformation rule,is a topic for producer,recearcher,and regulator,and also a kind of basis to set the standard.This paper systematically analyzes the source,limit standard,detection method,and change law of related components of formaldehyde in Baijiu,and puts forward the follow-up development priorities,in order to promote the healthy development of the Baijiu industry.
