Research Progress on Detection Methods of Mycotoxins in Ginger
Food safety is related to everyone's physical and mental health.Ginger,as an essential auxiliary seasoning ingredient in people's daily diet,has the effects of increasing appetite,strengthening spleen and appetizing and antioxidation.However,ginger is easy to be contaminated by fungi in the process of planting,growth and preservation,which will do harm to human body.In this paper,the research progress of aflatoxin and ochratoxin A in ginger was summarized,which laid the foundation for the future research on the detection methods of mycotoxins in ginger.
