Food safety is a major issue related to the national economy and people's livelihood,and it is crucial to establish a scientifically sound food testing system.This article provides an overview of the basic principles and instrument composition of high-performance liquid chromatography technology,with a focus on exploring its widespread application in the field of food detection.The article elaborates on the specific applications of high-performance liquid chromatography technology in pesticide residue detection,nutrient analysis,food additive identification,and fungal toxin screening.
