Research on the Detection Method of Contaminants in Food Based on Mass Spectrometry
With the development of social economy and the improvement of people's living standards,food safety has received extensive attention.Harmful contaminants in food can pose a serious threat to human health,and timely and accurate detection of contaminants in food is crucial.In this paper,we focus on the mass spectrometry-based food contaminant detection process,including sample collection,sample processing,mass spectrometry analysis and data processing and analysis,and discuss its application prospect in the field of food safety testing,aiming to provide new ideas and methods for food safety testing.
