Research on the Detection of Heavy Metal Pollution in Edible Salt by ICP-MS Method
In this study,inductively coupled plasma mass spectrometry(ICP-MS)is used to determine the content of heavy metals in different types and origins of commercially available food salt to assess their potential health risks,which can provide scientific basis for relevant departments to improve the quality standards of edible salt and implement more stringent food safety supervision measures.The results show that the heavy metal content of rock salt and sea salt is higher than that of refined salt.It is worth noting that the heavy metal content of salt products in some highly polluted areas is close to the safety limit.In this regard,it is recommended to strengthen the supervision of the production source,optimize the processing technology,strengthen regular testing and market sampling,and strengthen public education and consumption guidance to ensure the health and safety of consumers.
