摘要
随着人们生活水平的不断提高,食品安全问题日益受到关注.近年来,食品安全事故频发,如农产品中的农药残留、加工食品中的非法添加剂、微生物污染、重金属超标等,这些问题严重威胁着公众的健康.现有的食品安全检测方法虽有一定成效,但仍存在检测时间长、操作复杂、灵敏度不够高等问题.基于此,本文详细阐述生物传感器技术的原理,不同类型生物传感器在检测食品中微生物、化学污染物以及过敏原等方面的应用,同时探讨该技术在应用过程中面临的挑战及创新实践,以期为推动生物传感器技术在食品安全检测领域的发展与应用提供参考.
Abstract
With the continuous improvement of people's living standards,food safety has been paid more and more attention.In recent years,food safety accidents have occurred frequently,such as pesticide residues in agricultural products,illegal additives in processed foods,microbial contamination,excessive heavy metals,etc.,which seriously threaten public health.Although the existing food safety detection methods have some effectiveness,there are still some problems such as long detection time,complex operation and insufficient sensitivity.Based on this,this paper elaborates the principle of biosensor technology,the application of different types of biosensors in the detection of microorganisms,chemical pollutants and allergens in food,and discusses the challenges faced by the technology in the application process and innovative practices,with a view to providing references for promoting the development and application of biosensor technology in the field of food safety detection.
