本文综述番茄及番茄制品中存在的微生物污染、农药残留、重金属污染以及加工过程中产生的有害物质等主要安全风险,并概述相应的检验技术,包括病原菌分离鉴定、PCR核酸扩增、色谱-质谱联用技术、电感耦合等离子体质谱和酶联免疫吸附测定等.同时,分析当前番茄及番茄制品安全检验技术存在的问题,并提出相应的优化策略,为保障番茄及番茄制品安全提供技术支撑.
Problems and Optimization Strategies in Safety Inspection Technology of Tomato and Tomato Products
This article summarizes the main safety risks of microbial contamination,pesticide residues,heavy metal contamination,and harmful substances generated during the processing of tomato processed foods,and outlines the corresponding inspection techniques,including pathogen isolation and identification,PCR nucleic acid amplification,chromatography-mass spectrometry,inductively coupled plasma mass spectrometry,and enzyme-linked immunosorbent assay.At the same time,analyzes the existing problems in the safety inspection technology of tomatoes and tomato products,and proposes corresponding optimization strategies to provide technical support for ensuring the safety of tomatoes and tomato products.
