摘要

目的:建立一种酶联免疫法测定肉及肉制品中细菌内毒素的检测方法.方法:根据抗体与内毒素吸附反应释放出有色基团的量之间存在的量化关系,绘制标准曲线,计算肉及肉制品中细菌内毒素的含量,建立肉及肉制品中内毒素的检测方法.结果:在 0~60 EU·mL-1 方法具有良好的线性关系,相关系数大于0.99,加标回收率为 96.9%~103.9%,相对标准偏差为 3.30%.结论:该方法能够满足肉及肉制品中细菌内毒素的快速检测要求.

Abstract

Objective:To establish a method for the determination of bacterial endotoxin in meat and meat products by enzyme-linked immunoassay.Method:According to the quantitative relationship between antibody and the amount of colored groups released by the adsorption reaction of endotoxin,the standard curve was drawn to calculate the content of bacterial endotoxin in meat and meat products,and the detection method of endotoxin in meat and meat products was established.Result:In the range of 0~60 EU·mL-1,the correlation coefficient was greater than 0.99,the recovery rate was 96.9%~103.9%,and the relative standard deviation was 3.30%.Conclusion:This method can meet the requirements of rapid detection of bacterial endotoxin in meat and meat products.
