Progress of Research on Active Components and Deep-Processed Foods of Ganoderma lucidum
Ganoderma lucidum has high nutritional value,rich in polysaccharides,triterpenoids,sterols and alkaloids and other active ingredients.In recent years,Ganoderma lucidum has been widely developed in functional foods.This paper summarized the active ingredients and nutritional value of Ganoderma lucidum,summarized the research status of Ganoderma lucidum deep-processed food in China,analyzed the existing problems in processing and production,and proposed the future development direction,in order to provide reference for the development of Ganoderma lucidum deep-processed food industry.
