摘要

鸡蛋作为一种优质且经济实惠的营养来源,深受消费者青睐.本研究通过比较市售土鸡蛋、普通鸡蛋和可生食鸡蛋的主要营养成分、兽药残留、重金属污染和微生物污染情况,探究其营养价值和安全性.结果表明,相较于普通鸡蛋和可生食鸡蛋,土鸡蛋的蛋白质含量更高、不同批次间微量元素差异较小,但重金属污染情况严重;而普通鸡蛋的兽药残留问题则不容忽视.

Abstract

Eggs,as a high-quality and cost-effective source of nutrition,are highly favored by consumers.This study compared the main nutritional components,veterinary drug residues,heavy metal contamination,and microbial contamination of commercially available eggs,regular eggs,and raw edible eggs to explore their nutritional value and safety.The results showed that compared to regular eggs and raw edible eggs,the protein content of local eggs was higher,and the differences in trace elements between different batches were smaller,but the heavy metal pollution was severe;the issue of veterinary drug residues in ordinary eggs cannot be ignored.
