Research on the Nutritional Value and Safety of Commercially Available Eggs,Regular Eggs,and Raw Edible Eggs
Eggs,as a high-quality and cost-effective source of nutrition,are highly favored by consumers.This study compared the main nutritional components,veterinary drug residues,heavy metal contamination,and microbial contamination of commercially available eggs,regular eggs,and raw edible eggs to explore their nutritional value and safety.The results showed that compared to regular eggs and raw edible eggs,the protein content of local eggs was higher,and the differences in trace elements between different batches were smaller,but the heavy metal pollution was severe;the issue of veterinary drug residues in ordinary eggs cannot be ignored.
