随着人们生活水平的提高以及生活节奏的加快,餐饮业面临着巨大压力,包括食材采购、加工制作、管理、劳资、场租以及税收等方面.为应对这些挑战,预制菜行业应运而生,成为餐饮业的一种新兴合作模式.然而,预制菜行业中,无论是消费端的市场认知与培育,还是供给端的工业化生产难题,都是亟待解决的问题.本文旨在概述预制菜的概念和发展历程,分析预制菜产业的现状,探究预制菜与餐饮业的良好合作发展模式,最后对预制菜行业的前景进行预测,以期为相关研究和实践提供借鉴.
Cooperation Model and Prospect Forecast of Pre-Cooked Food and Catering Industry
With the improvement of people's living standards and the acceleration of the pace of life,the catering industry is facing tremendous pressure,including food procurement,processing,management,labor,rent and taxation.In order to meet these challenges,the prefabricated food industry came into being,and became a new cooperation mode of the catering industry.However,in the prefabricated vegetable industry,both the market cognition and cultivation of the consumer side and the industrial production problems of the supply side are urgent problems to be solved.The purpose of this paper is to summarize the concept and development process of pre-made vegetables,analyze the current situation of pre-made vegetables industry,explore the good cooperation development mode between pre-made vegetables and catering industry,and finally predict the prospect of pre-made vegetables industry,so as to provide reference for relevant research and practice.
