Diversity of Microbial Communities in Canteen Environmental Samples in University
To investigate the characteristics of foodborne bacteria in university cafeteria environments, this study evaluated the bacterial communities of cafeteria samples using 16S rDNA high-throughput sequencing technology. The results showed that there were significant differences in bacterial communities among environmental samples. The high human-derived bacteria suggested that the environmental microbiome may be origin from skin contact and human contamination. However, the abundance of most bacterial species was below the risk threshold and the degree of pathogenicity was low. This study provides a scientific basis for establishing an effective food safety monitoring system in university cafeterias, which helps to prevent the occurrence of foodborne microbial contamination.
