Response Surface Methodology is Employed to Optimize the Extraction of Anthocyanins from Grapes
The single-factor experiment was used to study the effects of water bath time,ultrasonic time,extraction temperature,and ethanol concentration on the extraction amount.Then,the response surface analysis method was applied to optimize the design,and a mathematical model with the extraction amount of anthocyanins as the response value was constructed.The optimal process conditions have been determined:water bath time of 45 minutes,ultrasonic time of 20 minutes,temperature of 50 ℃,and ethanol concentration of 60%.Under these conditions,the extraction rate is the highest,and the extraction amount of anthocyanins is 20.01 mg/100 g.This study provides theoretical support and technical reference for the extraction process conditions of anthocyanins in grapes.
